Pecan Dream
Sean Nemitz, part of the four-man Holy City team, had a dream. He dreamed that Holy City would make two beers out of staple Southern nuts (tee hee). One was boiled peanut beer, which has not yet (and may not yet) come to be. The other was a pecan beer, which inspired the crew to make Pecan Dream while they were awake. It's a very solid brown ale made with around 75 pounds of roasted pecans per 15 bbls (about 465 gallons). The pecans impart more aroma than taste, and are much more present when the beer warms up a bit. This is literally a dream come true.
A four-month Seagram's bourbon barrel-aged version of this appeared at Brewvival 2013.
